 Masaledar Gujarati Patra: Ek Behtareen Snack Recipe



Patra recipe, also known as Alu Vadi, ek popular snack hai jo India ke alag-alag regions mein enjoy kiya jaata hai. Ye delightful dish, jo colocasia leaves (arbi ke patte) se banti hai, flavors aur textures ka perfect combination hai. Patra recipe banane ke liye aapko ye ingredients chahiye:


 For the Paste:

- 12 Colocasia (arbi) leaves

- 1 cup besan (gram flour)

- 3 tablespoons imli ka pulp

- 3 tablespoons gud, chop kiya hua

- 1 teaspoon haldi powder

- 1 teaspoon lal mirch powder

- 1 teaspoon dhaniya powder

- 1 teaspoon jeera powder

- Namak swad anusaar

- Pani zarurat ke hisaab se


 For Steaming 

- Tel grease karne ke liye


 For Tadka:

- 2 tablespoons groundnut oil (moongfali ka tel)

- 1/2 teaspoon rai

- 2 teaspoons safed til

- 8-10 curry patte

- 1/4 teaspoon hing

- Taaza dhaniya garnish ke liye






 Step 1: Preparing the Tamarind and Jaggery Mixture 

Sabse pehle lagbhag 20 grams imli aur 45 grams gud ko aadha cup garam paani mein soak kar lijiye. Ise tab tak chhod dijiye jab tak gud poori tarah se ghul na jaye aur imli soft na ho jaye.


 Step 2: Selecting the Colocasia Leaves 

Arbi ke patte select karte waqt slightly blackish stalk wale patte chuniyega kyunki inmein kharash kam hoti hai green stalk wale patton ke mukable. Medium size ke patte lijiye taaki roll banana aasaan ho. Patte ko acchi tarah se dho kar sukha lijiye.


 Step 3: Preparing the Besan Paste  

Ek mixing bowl mein besan, imli ka pulp, gud, haldi, lal mirch powder, dhaniya powder, jeera powder, aur namak mila lijiye. Dheere-dheere paani daalte hue ek smooth, thick paste bana lijiye. Dhyan rakhiye paste mein lumps na bane.


 Step 4: Layering the Colocasia Leaves 

Ek colocasia leaf lekar, rough side ko upar rakh kar spread kar dijiye. Upar se besan paste ka patla layer evenly laga dijiye. Phir ek aur leaf le kar, opposite direction mein rakh dijiye aur same process repeat kijiye. Do leaves usually kaafi hote hain, lekin agar aap chahein toh 4 tak layer kar sakte hain.


 Step 5: Rolling the Patra  

Patton ke sides ko beech mein fold kar ke tightly roll karna shuru kijiye. Dhyan rakhiye ki roll firm ho aur gaps na ho. Roll karne ke baad edges ko besan paste se seal kar dijiye.


 Step 6: Steaming the Patra 

Steaming tray ko oil se grease kar lijiye aur rolls ko tray par rakh dijiye. Preheated steamer mein 20 minutes ke liye steam kar lijiye. Check karne ke liye ek knife dal kar dekhiye, agar knife clean nikal aaye toh Patra ready hai. Patra ko thanda hone dijiye aur phir 1 cm thick slices mein cut kar lijiye.


 Step 7: Slicing and Tadka   

Steamed Patra ko slices mein cut karne ke baad, ek pan mein groundnut oil garam karke rai, safed til, curry patte, aur hing ka tadka laga lijiye. Flame ko low karke Patra slices ko pan mein add karke dono taraf se golden brown aur crispy hone tak fry kar lijiye. Upar se taaza dhaniya garnish kar dijiye.


 Step 8: Serving Suggestions

Garam-garam Patra ko peanut oil ya waise hi serve kar sakte hain. Ye chai ke saath perfect snack hai, specially monsoons mein.


 Tips for Perfect Patra recipe

- Hamesha blackish stalk wale colocasia leaves ko select kijiye taaki kharash na ho.

- Ensure kijiye ki besan paste smooth ho aur usme lumps na bane.

- Steamer ko pehle se preheat karke steam kijiye taaki even cooking ho.

- Patra ko medium heat par fry kijiye taaki crispy texture aaye bina andar se dry huye.
