 Ingredients for Marination:

1. Chicken with bone - 750 grams

2. Namak (Salt) - 1 tablespoon

4. Bhuna kutta jeera powder (Roasted cumin powder) - 1 tablespoon

5. Lemon juice - Half lemon

6. Lasun-adrak ka paste (Garlic-ginger paste) - 1 tablespoon

7. Food color (Optional) - Thoda sa

 Ingredients for Garam Masala:

8. Sabut dhaniya (Coriander seeds) - 1 teaspoon

9. Jeera (Cumin seeds) - 1 teaspoon

10. Saunf (Fennel seeds) - 1 teaspoon

11. Laung (Cloves) - 2

12. Badi elaichi ke seeds (Black cardamom seeds) - 1 (sirf seeds lene hain)

 Ingredients for Gravy:

13. Tel (Oil) - 1 tablespoon (for frying onion)

14. Pyaaz (Onion) - 1 large size, roughly sliced

15. Hari mirch (Green chilies) - 2-3, tod kar

16. Kaju (Cashews) - 8-10

17. Dahi (Yogurt) - Half cup

 Ingredients for Final Cooking:

18. Tel ya butter (Oil or butter) - 1 tablespoon (for cooking chicken)

19. Shahi jeera (Caraway seeds) - 1/2 teaspoon

20. Dalchini ka tukda (Cinnamon stick) - 1-2 inch ka tukda

21. Tejpatta (Bay leaves) - 2

22. Grated pyaaz (Grated onion) - 2 medium size

23. Ginger-garlic paste - 1 tablespoon

24. Kashmiri mirch powder - 1 teaspoon

25. Haldi powder (Turmeric powder) - 1/2 teaspoon

26. Namak (Salt) - Swaadanusar (Taste ke according)

27. Coriander leaves - Garnishing ke liye

28. Kaju ke tukde (Cashew pieces) - Garnishing ke liye (optional)

Yeh saari cheezen lagengi aapke Chicken Maharaja banane mein.

Is recipe ke liye maine yahan pe 750 gram bone-in chicken liya hua hai. Ismein 1 tablespoon namak, 1 tablespoon Kashmiri red chili powder, 1 tablespoon bhuna kuta jeera powder, aur half lemon juice daalna hai. Ab ismein 1 tablespoon lasun-adrak ka paste bhi daalna hai. In saari cheezon ko chicken par achhe se lagaaiye, jisse masala andar tak jazb ho sake. Food color totally optional hai, lekin color bahut pyaara aata hai, isliye maine daala hai. Chicken ko 15-20 minute ke liye marinate hone ke liye side mein rakh dijiye.

Ab humein ek pan lena hai, jismein kuch sabut khade masale roast karne hain, jisse flavor bahut acha aayega. Is garam masale mein 1 teaspoon sabut dhaniya, jeera, aur saunf, 2 laung, aur badi elaichi ke seeds (black cardamom) liye hain. In sabko achhe se roast kar lijiye, aur jab khushboo aane lage to ise powder kar lijiye. Is masale ko side mein rakh dijiye.

Phir se pan mein 1 tablespoon tel garam karein. Ismein 1 large size ki pyaaz ko roughly slice kar daalein. Saath hi 2-3 hari mirch todkar daalein. Pyaaz ko halka sunahra hone tak fry karein. Ab 8-10 kaju daalein aur achhe se mila lein. Jab pyaaz halki-halki golden ho jaaye, to ise side mein kar lein aur thoda thanda hone dein. Ise phir grinder jar mein daal kar pees lein. Isi mixture mein aadha cup dahi daal kar blend kar lijiye.

Ab pan mein phir se 1 chamach tel ya butter daalein. Ab ismein marinate kiya hua chicken daalein. Chicken ko halka sa grill karein, jisse iska taste aur bhi acha ho jaaye. Ise lagataar high flame par fry karein, taaki chicken ke juice achhe se fry ho jaayein aur usmein golden color aa jaaye. Chicken ko 5-7 minute tak is tarah se cook karein, phir flame off kar dein.

Ab ek handi ya kadhai lein, usmein 4 tablespoon tel daalein. Ismein shahi jeera, 1-2 inch ka dalchini ka tukda, aur 2 tejpatta daalein. Ab ismein 2 medium size ki grate ki hui pyaaz daalein. Pyaaz ko halka golden hone tak bhoon lein. Jab pyaaz sunahri ho jaaye, to ismein 1 tablespoon ginger-garlic paste daalein. Masale ko achhe se bhoon lein.

Ab ismein wo special garam masala daalein, jo humne pehle banaya tha. Iske saath Kashmiri mirch powder, haldi powder, aur swaadanusar namak daalein. Masale ko achhe se bhoon lein, jab tak tel masale se alag na hone lage. Ab ismein wo paste daalein, jo pyaaz, kaju, hari mirch, aur dahi ka tha. Ise achhe se mila lein aur medium flame par tasalli se bhoonne dein.

Jab masale se tel alag hone lage, to ismein chicken add kar dein. Chicken ko achhe se masale mein coat karein. Ab ise low flame par cook karein, jisse gravy ka flavor chicken mein achhe se sama jaaye. Beech-beech mein halka chalate rahen. Chicken ko 5-10 minute aur cook karein, jisse chicken poori tarah gal jaaye.

Ant mein is par coriander leaves aur kaju ke tukde daalein. Aur yeh lajawab "Chicken Maharaja" bankar tayaar hai. Ise garma-garam khushka pulao, tandoori roti, butter roti, naan roti ya lachha paratha ke saath serve karein.
