Chole Bhature banane ki recipe



 Aaj hum banayenge garam garam street food ki tarah jaaykedaar chole masala ki recipe. Agar chole chane ke saath bhature jaisi puri mil jaaye, toh ghar walon ko aisa hi lagega jaise restaurant ka khana kha rahe hain. Toh chaliye step-by-step bilkul perfect tareeke se chole bhature banate hain.


Chole Bhature banane ki recipe

Ingredients:

1. Chole:

   - 200 grams Kabuli chana (white chickpeas)

   - 2-2.5 glasses water for boiling

   - 1/2 teaspoon salt

   - 1 bay leaf (Tej Patta)

   - 1/2 inch cinnamon stick (Dalchini)

   - 1 black cardamom (Badi Elaichi)


2. Masala for Gravy:

   - 3-4 tablespoons oil

   - 1/2 teaspoon cumin seeds (Jeera)

   - 2 pinches asafoetida (Hing)

   - 2 large onions, finely ground into paste

   - 1 teaspoon ginger-garlic paste

   - 1 teaspoon red chili powder

   - 2 teaspoons coriander powder (Dhania Powder)

   - 2 pinches black pepper powder (Kali Mirch Powder)

   - 1/2 teaspoon amchur powder (or chaat masala)

   - Salt to taste

   - 2 pinches black salt (Kala Namak)

   - 1 teaspoon Kitchen King Masala (or Chole Masala)

   - 1/2 teaspoon turmeric powder (Haldi)


3. Tomato Paste:

   - 2 large tomatoes, chopped

   - 2 green chilies

   - 2-3 tablespoons boiled chole


4. Tadka:

   - 1 tablespoon ghee (or oil)

   - 1 teaspoon finely chopped ginger

   - 2 green chilies, slit

   - 1/2 teaspoon Kashmiri red chili powder


5. Garnish:

   - 1 teaspoon dried fenugreek leaves (Kasuri Methi)

   - Freshly chopped coriander (Hara Dhaniya)


Steps:

1. Chole Preparation:

   - Raat bhar ke liye 200 grams Kabuli chane bhigo kar rakkhen. Agar bhigana bhool gaye, to 7-8 ghante ke liye zaroor bhigayen.

   - Pressure cooker mein chane, 2-2.5 glasses paani, 1/2 teaspoon namak, bay leaf, cinnamon stick, aur black cardamom daal kar, 5-6 seeti medium flame par lagayen.


2. Masala Preparation:

   - Ek pan mein tel garam karen, jeera aur hing daal kar tadka lagayen.

   - Onion paste daal kar bhun layen jab tak thoda sa golden brown na ho jaye.

   - Ginger-garlic paste daal kar 1-2 minute bhun layen.

   - Sabhi sukhe masale daal kar, thoda paani mila kar masale ko bhun layen.


3. Tomato Paste:

   - Do bade tamatar, 2 hari mirch, aur 2-3 tablespoons uble hue chane ko mixer mein piskar paste bana lein.

   - Ye tomato paste bhune hue masalon mein daal kar, ache se 3-4 minute tak bhun layen jab tak tel upar na aa jaye.


4. Mixing Chole with Gravy:

   - Bhune hue masalon mein uble hue chole daal kar, bacha hua chole ka pani bhi mila den.

   - 4-5 minutes ke liye dhak kar pakayen, taaki gravy ka taste chane mein achhe se aa jaye.

   - Chole ka pani aur gravy adjust kar lein, kyunki thanda hone par gravy aur ghadhi ho jati hai.


5. Final Tadka:

   - Ek tadka pan mein ghee garam karen. Badi katti hui adrak aur hari mirch fry karen.

   - Gas bandh karke Kashmiri lal mirch powder daal kar, turant ye tadka chole mein daal den.

   - Upar se kasuri methi aur hara dhaniya daal kar garnish karen.


6. Serving:

   - Garma garam chole ko serve karen aur isse bhature ke sath kaayen.


Chole masala banane ke liye, maine safed chane yaani Kabuli chane raat bhar paani mein bhigo kar rakhe the. Ye 200 gram chane hain, jo achche se phool kar double size ke ho gaye hain. Agar aap raat mein chane bhigona bhool gaye ho, toh 7-8 ghante ke liye zaroor bhigayein taaki ye achhe se phool jaayein. Ab chane ko hum boil kar lete hain. Gas par ek cooker rakh kar saare chane daal dein, aur itna paani daalna hai ki chane ke upar aa jaaye. Maine lagbhag 2-2.5 glass paani daala aur aadha chamach namak bhi daal diya taaki chane feeke na lagein.


Ab hum thode se khade masale daalenge taaki chane ke andar tak flavour utar jaaye. Ek tej patta, aadha inch ka daalchini ka tukda, aur badi yaani kali ilaichi daal kar chane ko galne ke liye chhod dein. Cooker ka dhakkan laga kar 5-6 seeti medium flame par lagaa dein. Chane ko humein bilkul acche se galana hai. Agar chane poori tarah bhige hue hain, toh baking soda daalne ki zaroorat nahi hai.


Seetiyaan lagne ke baad, gas band kar ke cooker ka pressure nikalne dein. Chane ko check kar lein; agar ye acche se gal chuke hain, toh tej patta, daalchini ka tukda aur badi ilaichi nikaal lein. Paani ko nahi pheinkna hai kyunki aage hum isse use karenge. Ab chane ko side mein rakh kar gravy bana lete hain.


Ek pan mein 3-4 chamach tel garam kar ke aadha chamach jeera daal dein, aur saath hi do pinch hing bhi daalein. Hing daalne se chane acche se hazm ho jaate hain. Do bade size ki pyaaz ko maine mixer mein pees kar paste bana liya hai, isse gravy bahut badiya hoti hai. Pyaaz ko acche se bhun lein taaki kachchi smell khatam ho jaaye. 


Phir ek chamach adrak-lehsun ka paste aur sukhe masale daal dein. Ek chamach lal mirch powder, do chamach dhania powder, do pinch kali mirch powder, aadha chamach amchur powder, thoda namak, do pinch kala namak aur ek chamach kitchen king masala ya chole ka masala daal kar sab kuch acche se mix kar lein. Masale ko jalne se bachane ke liye thoda paani daal kar acche se bhun lein.


Ab do bade tamatar, do hari mirch, aur ubale hue chane ko thoda paani daal kar paste bana lein. Ye paste gravy ko gadha bana dega. Ab is paste ko masale mein daal kar 2-3 minute tak acche se bhunein taaki tamatar bhi pak jaaye.


Masale mein se tel nikalne lage toh samajh jayein ki bhunai ho gayi hai. Ab ubale hue chane daal kar, unhe gravy ke saath acche se mix kar dein. Chane ke andar gravy ka taste aane ke liye 4-5 minute ke liye dhak kar paka lein. Paani adjust kar lein kyunki gravy thandi hone ke baad aur bhi gadhi ho jaati hai.


Jab chole pak kar tayaar ho jaayein, toh last mein thoda kasuri methi daal kar tadka lagayein. Tadke ke liye desi ghee mein thodi si adrakh aur hari mirch fry kar ke usmein thodi Kashmiri lal mirch powder daal kar garam tadka chole par daal dein. Upar se thoda hara dhaniya daal kar garam garam chole masala tayaar ho jaata hai.
